Peanut Butter & Jelly Cupcakes


This cupcake was a really big hit with the family. This cupcake consists of a vanilla cake, raspberry jam in the centre and a peanut butter buttercream on top. I used smooth peanut butter to ensure a soft buttercream and the whole combination was absolutely gorgeous. Even if you aren't a PB&J fan this cupcake could turn you. The consistency of the buttercream was perfect - this time I used real butter at room temperature and boy did it make the difference! The only thing I would do differently next time is maybe decorate with a few peanuts, again just to show the flavour of the cupcake.
This recipe will definitely be added to my recipe book to make again!
