These cupcakes were my favourite, Tiramisu Cupcakes. They consist of a vanilla cupcake, with the centre soaked with strong coffee and sprinkled with cocoa, filled with rum mascarpone frosting, sprinkled with cocoa again and topped with piped rum mascarpone frosting. The frosting held really really well on these cupcakes and I think I'm confident in saying I've nailed the buttercream consistency. These were - again a real hit with the family and you could make the frosting with brandy, rum, whiskey - whatever your tipple is. Make sure you use full fat ingredients with this cake so you replicate the creamy Tiramisu flavours.
