So my mixer came yesterday and I cannot wait to try it out later on today, I am going to make Peanut Butter and Chocolate Cupcakes and Island Breeze Cupcakes (Mango, Pineapple and Coconut - I did want to call it the Lilt Cupcake but I think I'd be in trouble if I called it that lol)

And I have bought two new piping nozzles for 85p each!!! And they are massive so will give them a go later on too and!!!! (how could I forget) a ice cream scooper thing to scoop my batter into cases :) will make my life so much easier now! And I will feel proper professional :D

Really can't wait for my groupon kit to come and my flower fondant cutters I got from eBay, they are taking a while to come, but it's worth the wait cause I will have a proper cupcake kit ready to bake you all lots of goodies :)


And seeing as I had a day off work today, I made a website and a facebook page!!!!

New toy!

Okay so I couldn't resist ordering myself this, it was payday today AND I want to make quality cupcakes so I treated myself to a Charles Jacob mixer :) 


Isn't it pretty?! :)

Its going to be delivered tomorrow and I have a day off on Wednesday so you guessed it! I will have another cupcake day on Wednesday!! 
I'm not sure on what to make, maybe Strawberries and Cream? Island Breeze? Lemon Meringue Pie?
What do you guys think? I will have to bring them into work on the Thursday so if you Admiral viewers have any suggestions please message me ! 


Tiramisu Cupcakes


These cupcakes were my favourite, Tiramisu Cupcakes. They consist of a vanilla cupcake, with the centre soaked with strong coffee and sprinkled with cocoa, filled with rum mascarpone frosting, sprinkled with cocoa again and topped with piped rum mascarpone frosting. The frosting held really really well on these cupcakes and I think I'm confident in saying I've nailed the buttercream consistency. These were - again a real hit with the family and you could make the frosting with brandy, rum, whiskey - whatever your tipple is. Make sure you use full fat ingredients with this cake so you replicate the creamy Tiramisu flavours.

Peanut Butter & Jelly Cupcakes


This cupcake was a really big hit with the family. This cupcake consists of a vanilla cake, raspberry jam in the centre and a peanut butter buttercream on top. I used smooth peanut butter to ensure a soft buttercream and the whole combination was absolutely gorgeous. Even if you aren't a PB&J fan this cupcake could turn you. The consistency of the buttercream was perfect - this time I used real butter at room temperature and boy did it make the difference! The only thing I would do differently next time is maybe decorate with a few peanuts, again just to show the flavour of the cupcake.
This recipe will definitely be added to my recipe book to make again!

Maple Syrup and Bacon Cupcakes


So these cupcakes were really really good but had a few problems when making them, the buttercream was too runny after adding in the maple syrup so next time I will make a syrup sponge and drizzle the syrup over the top of a vanilla buttercream. Also I don't feel like I put enough bacon in the cakes, but to be fair this was an experimental cake as I wasn't sure it was going to work but next time I know to put more bacon in the cake. Maybe I will decorate with bacon to give it more of a bacon and syrup cupcake look.

excited eeeee

so I can't remember the last time I was so excited about something, tomorrow I am going to a cupcake decorating class ! it is going to be soooo much fun and hopefully I will learn loads!

I've been looking around on the internet and I bought some flower fondant cut outs for 99p - amazing :)

and I was looking around on the tesco website and found some stand mixers !! I've been looking at buttercream recipes online and most of them say they are best made with a stand mixer with a paddle attachment so I will go soon and check them out :) I am so excited for tomorrow and then the weekend to start baking!

this time tomorrow I will be one step closer to my dream :)

Recipe: Jaffa Cake Cupcake


So I made this cupcake on the weekend and it was a pretty good hit with the family so here is the recipe on how to make it...enjoy!

Makes 12 cupcakes

For the chocolate cake:

150g lightly salted butter
250g caster sugar
150g self raising flour
25g cocoa powder
2 eggs
1 teaspoon baking powder

1) Preheat your oven to 180 (fan assisted).
2) Measure and put all ingredients in a bowl .
3) Using an electric whisk, whisk all ingredients together for 2 - 4 minutes until all mixed thoroughly.
4) Once mixed, put 12 cupcake cases into a cupcake/muffin tray.
5) Using an ice cream scooper, scoop the batter into the cases, ensuring that the cases are only full by 2 thirds.
6) Once the oven is at the correct temperature put in the oven and bake for 18-20 minutes. When they are golden, gently poke a cocktail stick through the middle of the cake and see if it comes out clean. If it does then take the tray out of the oven and leave on a heatproof surface. Leave the cakes in the tray for 2-3 minutes. If not, then leave in the oven for a few more minutes, being careful to check every couple of minutes as they can go from cooked to over cooked in a matter of minutes!
7) Remove the cakes from the tray and leave on a cooling rack to cool completely before decorating.

For the decoration and filling:

12 teaspoons of smooth orange marmalade
200g Cadburys milk chocolate
half of an orange peel

8) When the cakes are completely cooled, using a teaspoon, scoop out a circular hole in the top of all the cakes.
9) Once all the cakes have chunks taken out, fill the chunks with the marmalade *Make sure the cakes are cool so the marmalade does not melt* (see picture below)
10) When all the cakes are filled put to one side
11) Melt all the chocolate in a heatproof bowl over gently simmering water.
12) Once all the chocolate is melted, take off the heat and leave to cool slightly so it does not melt the marmalade once on the cakes.
13) When the chocolate is cooled but still in liquid form, using a palette knife spread about 2 chunks worth of the chocolate over the cakes.
14) When all the cakes are covered, put them into the fridge to set.
15) Cut the orange peel into 2 thin strips and put into any remaining marmalade.
16) Once the cakes are set in the fridge, decorate with the marmalade orange peels.
17) Enjoy!!

new stuff :O !

so I have just been nosing around on eBay and found some decent disposable piping bags, they were 100 for 4.99 so I thought I would get them, hopefully they will come in time for the weekend when I try and perfect my buttercream ! :)

I have also been hunting around for a decent sized star nozzle too, but I think the one that we have already is pretty good so I might just hang fire on that until the weekend when I can test the buttercream to see if it pipes smoothly :D

and I really really really want these too but I will have to wait until payday to get these !

cupcakes galore


Here are the cupcakes that I made yesterday.

There are Oreo Cupcakes, White Chocolate and Strawberry Cupcakes (Chocolate and Vanilla Cake) and Jaffa Cake Cupcakes.

I probably spent around 5 hours cooking all these using a recipe book I got at christmas.
I tried the chocolate frosting recipe in there but even though I followed it to the tee, the frosting did not pipe.

Today, I have been researching online how to make the perfect frosting. 
So, next weekend I will practise making more and see how it goes.
