Red Velvet


Okay, so I know I've made these before but on the weekend I bought a star nozzle and I really really wanted to try and do rose like frosting! So this was my second attempt (first were the caramel cupcakes) and I think it went pretty well! Need to practise some more but not bad!!



Lemon Meringue

These cupcakes were made for Danielle, a last minute order last night! Luckily I had all the stuff in so I whipped these up! Just wanted to show you the picture of them in their boxes! I'm so proud of my cupcakes! They look lovely :)


Caramel Pecan Cupcakes


So these cupcakes were ordered by a Mr Mark Prowicz, a friend of mine from work. I had never made caramel before and for my first attempt I think it went pretty well! This cupcake consists of a vanilla sponge with chopped pecans, filled with homemade caramel sauce and topped with a caramel buttercream and finally drizzled with homemade caramel sauce! These cupcakes were really fun to make and not as hard as I thought, I don't know if the sauce was just beginners luck but I was very worried it was going to go all wrong but luckily it didn't! I will definitely be making these again and will be lovely to make them for any of you readers!

Chocolate and Coconut Cupcakes


So when I made the Lilt inspired cupcakes and the coconut frosting was so nice I thought it would be yummy to make Bounty inspired cupcakes!  It consists of a chocolate and coconut cupcake topped with creamy coconut frosting topped with melted chocolate and sprinkled with dessicated coconut! It was a really nice combination and really easy to make!

Neapolitan Cupcakes



This idea was from Gaynor Jackson, my old manager in work, so we can thank her for her geniusness!! This cupcake was really tasty, full of flavour and bursting with colours. It consists of a strawberry, vanilla and chocolate cupcake topped with a pink and white vanilla buttercream. When I make these cupcakes again I will definitely use bigger cupcake cases as there was a bit too much frosting on these but that was my fault for getting too carried away with my piping bag!!
Also, you may notice the frosting is two tone! :) Now I was amazed but how good it looks and I couldn't work out how to do it! So I had a look on Google and I was so shocked at how 
simple it really is!!! All you need is each frosting in a seperate piping bag, and put those inside another piping bag with a nozzle and squeeze til you get a even spread and pipe away!! So simple!!

HEAVEN!


OMG.

So I just made me and Conner a cup of tea. And grabbed a Lemon Meringue Pie Cupcake for us to share. 
I took a bite and it was absolutely AH-MAZING! 

I have to say that this is the best cupcake I have ever made. The meringue really sets it off and the lemon is tart but not too tart, just perfect!

OOF it is stunning and I'm so proud to say it!




Lemon Meringue Pie Cupcakes


So these cupcakes I had the idea for a while back, something that just popped into my head when I was trying to think of pies I could turn into a cupcake! 
It consists of a lemon flavoured cupcake, filled with lemon curd, topped with meringue and blowtorched for that pie look!
I haven't tried one of these yet as I only made them about an hour ago but my brother Curtis tried one and said it was stunning - and Curtis is very very hard to please when it comes to food so I'm assuming I've done well!!! These cakes were alittle bit more work to do that normal cakes as you have to make a meringue - but on the other hand, if you have a stand mixer its not as bad :)

Red Velvet Cupcakes


Okay, so after my failed attempt on the weekend I was sure that I wasn't going to be defeated by this cupcake! My motherinlaw told me the best colouring to use is Supercook Red Colouring so I went out and bought some and tried to make these today. It was really really easy to make and the supercook food colouring was outstanding - its amazing the difference one thing makes to your cakes! So this cake is a chocolate cupcake coloured red and topped with a vanilla cream cheese frosting. What I really like about this cupcake is its density. Its really dense and thick but its not heavy in your stomach. Plus you can make it with any kind of topping! Vanilla buttercream, chocolate buttercream, strawberry buttercream! Whatever tickles your fancy! They taste amazing and look amazing!
Difficulty to make 4/10 (make sure you get supercook food colouring)
Taste 10/10!!!
Appearance 9/10 (would be better with red fondant hearts - aww!)

Raspberry Ripple Cupcakes



So with this cupcake I have to mention Jade from my team in work as Raspberry Ripple was her idea and I love the ice cream so I thought why not make a cupcake! I made a plain vanilla batter and put it into the cases and swirled in raspberry sauce. When the cakes came out of the oven, the sauce didn't stay pink and cooked and sunk to the bottom of the cases. The next time I will make these I will make a raspberry batter and swirl in pink food colouring to give it that ripple effect!! The buttercream was really nice though and the raspberry sauce stayed swirled in so it gave it that ice cream effect on top!!
These cupcakes were really nice and easy-ish to make! Definitely will try them again but make them a different way next time!

Chocolate and Pink Cream Cheese Cupcakes


So I initially wanted to make red velvet cupcakes, but the ones that I made were horrible. I had used Asdas own red colouring which was awful - and didn't even turn the cakes red just taste foul due to so much colouring being added - so I had to throw those away and make a fresh batch of cupcakes!
I decided to just go simple chocolate but make the cream cheese frosting pink! To give it that bit of colour. 
Again, really simple basic chocolate cupcake with a cream cheese frosting, decorating with pink sparkles.
These looked really fab especially for a birthday party or something girly. They looked even cuter in the boxes I had put them in!

Chocolate and Vanilla Cupcakes


Last week when I took some cakes into work, my friend Liz said that she only really liked chocolate and vanilla or simple cupcakes so it gave me the idea to do a basic cupcake. 
The cupcake is chocolate and it is topped with a smooth vanilla buttercream decorated with a mini oreo.
These were really simple but really tasty and easy to whip up in an hour! Will definitely be making these again to take into work!!

Cupcakes

Okay so I wasn't able to make cupcakes yesterday but I am going to make some today.
I am going to make Chocolate and Vanilla :) and then either a Red Velvet - depending on what the shop has - with a cream cheese frosting.
I just wanted to update you all so you weren't waiting for pictures!

Anniversary Cupcakes

So it is Conners nan and bamps anniversary tomorrow and they are going to have a little do. And I thought it would be nice if I some cupcakes! I'm not really sure on what flavour to do them. I'm thinking just a simple Chocolate and Vanilla and Strawberry and Vanilla too. Or maybe Chocolate and Vanilla and Red Velvet and Vanilla but with a cream cheese frosting on the red velvet. Yeah I think that will be nice :)

Peanut Butter and Chocolate Cupcakes


I was asking around my team in work to see what flavour cupcake they would like as I would bring them in to work for them to eat and the majority said peanut butter and chocolate so as the peanut butter and jelly cupcakes were so nice, I thought I would give it ago!
Again it was really simple to make, the cake consists of a chocolate cupcake with a dollop of peanut butter in the centre, topped with peanut butter buttercream and sprinkled with chopped nuts and drizzled with chocolate.
It was a really nice combination, nice and simple but nice to nibble at the same time. The next peanut butter cupcake I will make will be peanut butter and banana so watch this space for more!

Island Breeze Cupcakes


I had the idea for these cupcakes a couple of days ago. When I was doing my apprenticeship in cooking I made a pineapple upside down cake with a coconut custard and it was lush, and it tasted exactly like Lilt. So I had a though...why not put it into a cupcake? Now obvioulsy I can't call it Lilt so I came up with the name Island Breeze. 
It is a tropical flavour cupcake with a piece of dried pineapple and dried mango in the centre, with a coconut buttercream on the top and sprinkled with desiccated coconut. 
It was a really simple cupcake to make and tasted amazing. I have also found my buttercream is holding alot better and I think my cupcakes are starting to look like professional cakes. Although this cupcake is for a desired taste as I have discovered not many people like coconut but if you like coconut then this cupcake is definitely for you!
